So what's the deal with sodium? I hear it's not all bad? 

Heart friendly. Sodium is great in small doses.

Right you are. Sodium's like that friend who's great in small doses but can be too much to handle. It helps your muscles work, keeps your nerves firing, and balances your body fluids. But here's the thing - most of us are getting way too cozy with it.

Give me the cold, hard facts.

Brace yourself. In the UK alone, if we all cut our salt intake from 8g to 6g daily, we'd prevent 8,000 premature deaths and save the NHS £570 million each year. That's not pocket change!

Okay, but how does salt actually mess with our bodies? 

Intensifying flavour. Now that’s a full flavour tomato.

Ever noticed how salt makes tomatoes for example taste more... tomatoey? There's some cool science behind that. Salt loves water - it's like a molecular magnet. While that's great for bringing out flavour in your food, it's not so great in your bloodstream.

Like a salty magnet, attracting water and increasing blood pressure.

Picture this: sodium is like a tiny magnet with a positive charge, attracting negatively charged chloride to form salt. In your blood vessels, it's basically playing the same game - attracting water molecules like a sponge. More water means more pressure, kind of like cramming too much water through a garden hose. Your poor heart has to work overtime to handle all that pressure.

Hold up - what about potassium? Doesn't it do the same thing? 

Ah, here's where it gets interesting. Your body's pretty clever about this. Think of it like a party with two-rooms: the bloodstream is one room, and the inside of your cells is another. Sodium hangs out in the bloodstream, while potassium chills inside the cells. Special "bouncers" (or pumps) keep the party separated.

We need back-up to get this naughty sodium out.

When you overdo it with sodium, these bouncers can't keep up. But potassium? It gets whisked away into cells where it can't cause trouble. Better yet, it actually helps your body show sodium the exit through your urine!

So what's the solution? Do we have to give up flavour?
